Face Time

It was great catching up with "Creepy Uncle Sean" today.  Dyllan and I were fortunate enough to get to  "Face Time" chat with him on our iPhones.  Technology makes it so easy to stay in touch- and now that Sean (and Dad!) both got new iPhone's we can chat more often.  Sean and I only talked on the face time for a few min until we figured out how much extra it would be costing us.  We promised each other that our next technology tackle would be to Skype.  I havent dont much skyping here because the video quality was so bad- but I maybe I can get it fixed with our wireless extender (haha do I sound like a computer nerd or what?!)

So, once I get this Face Time rate and Skype figured out- lets chat!

Dyllan's First Day of School

... Well daycare.

In her stroller ready to go!

Wow, what a BIG day for Miss Bug.  Her first day of Daycare.  She is getting so old- so free- so independent!  She's no baby anymore- she is a TODDLER.  And now that shes a toddler- she's got personality, spunk, energy, ambition, and most of all- she is a social butterfly who need to get out and socialize.

We decided to enroll Dyllan in daycare- one day a week so that I can get my work done- without having to cram everything into the small windows which is nap time.  I've picked up some more work for Dr. Santos- that I can do from home - which is working out great.  Well, great when I can get it done during nap time- but I've been finding that nap time everyday just isnt enough time to get everything done.  On top of that- the government is offering a Child Care Benefit- which pays 50% of childcare fees- making one day a week (7:30am- 6:30pm) cost us only $50- which I thought was pretty good.

So after one visit to Acerwoods daycare- Dyllan had us convinced that she would be happy playing there with the other kids- when she refused to leave.  She did NOT want to stop playing or go home after our visit.     Today was no different.  I packed up her school bag- and we walked down to her first day of school.    She was so excited when we got there.  She left me as soon as I put her down- and off she went to the big pool of balls.  I checked her in and waved goodbye- and off I went.

She would NOT hold still long enough to snap a clear picture.  It was kinda tricky getting a picture because daycare rules are you can take pictures with any other kids in them...oops.

I got so much done today- its amazing how much you can accomplish without a little bug by your side.  At around 2pm I called to check in on her- and they told me she was having a ball.  They were surprised  impressed with her "healthy appetite" (I think thats their nice way of saying she is a little piggy!)

Dan rode his bike home in time to walk down to pick Dyllan up at her first day.  We were both sooo excited to see her.  Its funny how much you can miss her when she's not around.  We were both talking about her all day- wondering how she was doing- and looking forward to picking her up.  When we got there- Dyllan spotted us- and gave us a HUGE smile- then came flying over toward us for hugs.  It was the best feeling.  She was happy- and we were so happy that she had a good day (and that she was excited to see us!)

DJ Dyllan B.

Dyllan has been practicing her DJing lately.  With her Sesame Street Keyboard- she is ready to hit the clubs!  This video is kinda long- but worth watching when you have a few min.  Dyllan has learned (not sure where?!) some new ballerina moves.  DJ Dyllan Bug performers a set from her Sesame album.

Graduation: Koalas to Kangaroos

Dyllan is having a growth spurt.  The easiest way to tell is by how the way her clothes, and in particular- her diapers are fitting.  She has officially graduated to the Kangaroo's.  And she is pretty pleased with herself.  I, on the other hand.. am starting to panic.  At the store- the kangaroo diapers are the last ones..the biggest size... there is no next stage.  What does this mean... potty training?!  Yikes... Dyllan stop growing!  On the other hand.. maybe potty training wont be so bad.  It will save us money- that's for sure.  Until then.. we will just enjoy the Kangaroo stage:)
So pleased with herself.

Sunny Sunday in the Botanical Gardens

Sunday morning we woke up early and headed to the city to watch the finish of the Sydney Half Marathon.  The original plan was to run it- but didn't get around to organizing it in time.  We watched the runners on their final stretch as we walked through the Botanical Gardens.  We stopped for a picnic lunch and to play in the grass as the sun warmed up the crisp morning.

Kisses.
(Dyllan's just learned "kisses" and gives one back..usually)

Whats for dinner?!

Is it just me, or is "whats for dinner?" the questions that pops in your head just around the time that its too late to actually find a recipe and get down to the grocery store... but early enough to sit there and ponder what you can make with the items in your kitchen.  I am not a planner.  I am not a cook... or even a take out, order in, or get out of my sweats and go out for dinner kind of person.  Not these days anyway.  There are a number of reasons I prefer cooking dinners at home these days.  One- Dyllan eats around 5pm and is in bed by around 6pm- which means we can't go anywhere after 5pm (unless we have a babysitter).  Two- I am trying to eat healthy- which rules out most take out or restaurants (for the most part).  And three- and this is a big three- we are doing our best to stick within our food budget- which is tough enough as it is.. not taking into account many meals out or takeout.  Food in Australia is expensive.  Rediculous in fact.  A block of cheese is $8.. meat is usually a treat...fruit is a delacacy (3 banannas yesterday costed me $7.50).   Lucky we "hook-up" at Bakers Delight.. a friend of Lionel's works at the bakery down the road and every Thursday at the end of her shift- we get anything and everything we want.  FOR FREE... cinamon rolls, custard berry log loafs, apple cinnamon scrolls, Vegemite and cheese scrolls, loaves of bread, hot cross buns (yes, they actually sell and eat those here.. I thought it was only in nursery rhymes!) scones.. you name it.. we get it.  So every Thursday- our fridge, freezers, and cupboards are packed with bread, bread, bread.

Yesterday morning as I was working my butt off in spin class.. it dawned on me that the reason I have been feeling so lazy and "doughy" lately.. is because of all the bread.  Duh.  I have never been a huge carb person.. I dont love pasta, and I can usually pass on breads, rice, grains.. (sweets- though.. thats a different story..another day)  and all this bread has really effected me.  There are two.... ok 3 things that taste better here in Australia:  Breads, Cheese, and Chocolate.  Yikes.  Basically until today- my diet has consisted LARGELY on those 3 things.. in any form.  Melted.. Grilled Cheese, Tuna Melts, Chocolate ice cream bars (mini's so it doesn't count, right?), Shredded cheese out of the bag, cheese and tomato, chocolate scones, chocolate covered pretzels... you get the picture.  Ontop of all these tasty melty treats.. I live with a husband who is in training for an Ironman.  Can you imagine what he needs to eat with all that training?  Well, imagine that.. and me eating dinner with him.. pretty much bite for bite we eat close to the same amount.  (to my credit- I go to the gym and work out too... just not nearly as hard or as long as him.)

So today is the start of my road to recovery.  I am not going to order the sweet pasteries on Thursdays anymore.  (we will still get bread.. obviously.  Can't pass up a (free) good thing) but no more custards, choc chip, or apple cinamon glazed treats.  I usually make healthy choices when it comes to dinners- but my downfalls are snacks, sweets and now breads and cheeses.  So I have decided to share with you- some of the things I have made for dinner.  They are quick.  Easy. Cheap. and best of all.. Healthy.  I actually enjoy cooking these things- and they taste great- Bonus.  Once a week (maybe more) I will share a dinner that I have made- that I really enjoyed.

The first one I'll start with is this....

Last week Dan and I had our friends Mere and Eva over for dinner.  I had come up with a few ideas of what I wanted to fix before hand.  On my list was bruchetta, rocket (arrugula) and spinach salad with goat cheese and pear, and for desert fresh strawberries dipped in greek yogurt and brown sugar*. I was missing a main.  So who better to call on than one of my best friends Jessica.  The Chef.

Whats for dinner? Honey Dijon Chicken..

I'll start my dinner series with this recipe...

Tomato Bruschetta
Honey Dijon Chicken
Pear, goat cheese, rocket salad
Fresh Strawberries dipped in Greek yogurt and brown sugar
Cheesecake bites

Last week Dan and I had our friends Mere and Eva over for dinner.  I had come up with a few ideas of what I wanted to fix before hand.  On my list was bruschetta, rocket (arugula) and spinach salad with goat cheese and pear, and for desert fresh strawberries dipped in Greek yogurt and brown sugar*. I was missing a main.  So who better to call on than one of my best friends Jessica.  The Chef. To get some advice on what to fix as a main.
Jessica- hard at work

Jessica and her boyfriend, Trevor - also a chef- recently moved Mangenguey,  a remote island in the Philippines to cook and run the resort  (you can see their awesome life on their blog).  I sent Jessica and email asking for advice on the main and within minutes I got an email back with the answer.  I like that about Jessica- she is decisive, didn't give me options...just told me what to make.  She suggested honey Dijon chicken on the BBQ with cranberry and onion cous cous.  I took her advice and the dinner turned out amazing.  It was super easy- pretty quick- healthy and really good. So, thanks Jez.

Bruschetta mix, honey dijon marinade, strawberries and cheesecake

Cranberry cous cous

Pear, Rocket, Goat Cheese Salad

Ingredients & Recipe
  • Bruchetta:
    • 6 medium heirloom tomatoes (any tomatoes will do)
    • 1 red onion
    • handful of fresh basil
    • balsamic vinaigrette
    • olive oil
    • 1 pkg Greek feta
    • salt / pepper
    • 1 baguette
You can make this ahead of time- and let it sit in the fridge and soak up the flavor.  Basically I just make this according to taste- not measurements.. so taste as you go- you cant go too wrong.  You can cut the baguette into little pieces and toast in the over for a minute too if you want it warm and crispy.

  • Salad:
    • 1 package of rocket (arugula) lettus (you can use spinach instead or spinach and rocket mixed is good too)
    • 1 ripe pear
    • crumbled goat cheese
    • red onion
    • olive oil (~4 tablespoons)
    • balsamic (~3 tablespoons)
    • Dijon mustard ( ~ 1 tablespoon)
    • honey (~ 1 tablespoon)
Pour lettus into salad bowl- cut pear super thin- into slivers length wise- add super thin slivers of red onion.  To make the dressing whisk balsamic, olive oil and honey, then add olive oil and stir.  Taste it- and you be the judge if it needs more of one thing... I never measure- so that was just a guess.  It should taste tangy and only slightly sweet).  Top with crumbled goat cheese (you can use feta instead if you prefer).
  • Honey Dijon Chicken:
    • 1/2 c honey
    • 1/2 dijon mustard
    • garlic- chopped
    • 6 small chicken breasts (I cut some big ones in half to make smaller ones)
Jessicas directions:  "Salt, pepper and lightly oil chicken before grilling then brush with a pre-made mix of fresh chopped garlic, dijon and honey while grilling.  i would say equal parts honey and dijon, should be relatively thick and you can save leftovers, just be careful not to double dip whatever you brush the chicken with.  add minced or pureed garlic just for a little more flavor...maybe 2-4 cloves per 1/2 cup honey/1/2 cup dijon"

  • Couscous:
    • cous cous
    • yellow onion
    • dried cranberries
  • Jessica's directions:  "Pair with a dried cranberry (or dried cherry or a mix of both), sauteed yellow onion (super small diced) Cous Cous pilaf.  Cook Cous Cous as directed.  Saute onions, add dried fruit, cous cous and a little water.  Salt and pepper to your taste."
  • I make all my rices, cous cous, and quinoas in our rice cooker- and instead of water- I use reduced sodium chicken stalk- gives it more flavor.
  • Desert:
    • fresh strawberries (whole)
    • Greek yogurt- 1 cup
    • brown sugar- 1 cup
    • cheesecake (I bought one frozen)
  • Wash strawberries- put  Greek yogurt and brown sugar in separate small dishes.  Cut cheesecake into small squares and serve with toothpick. Dip strawberry in yogurt then brown sugar.
